Sotanghon is a Filipino noodle soup recipe that’s super easy to whip up. Sotanghon usually uses “bean thread noodles”, which turn translucent once cooked into the soup.
When I had “chicken long rice” for the first time in Hawaii, I was so excited to learn that it’s basically the same thing as the Filipino sotanghon I’m used to having.
This chicken sotanghon recipe is done the quick and “lazy” way, which is perfect if you want to make a quick dinner to fill up your family during cold weather.
Chicken sotanghon is also perfect to have if you’re feeling a bit sick!
