1 lb boneless skinless chicken thighs
4 cups water
1 small onion, sliced
2 cloves garlic, minced
4-5 slices ginger
1 tbsp soy sauce
1 tbsp fish sauce
1-2 tsp chicken bouillon
3 bundles bean thread noodles
3-4 cups chicken broth
2-3 sprigs green onions, sliced
Salt and pepper, to taste
1.) Rinse chicken under running water, then add chicken to a pot filled with 4 cups of water. Bring to a boil and remove any impurities that float to the top.
2.) To the pot add onions, garlic, ginger, soy sauce, fish sauce, and chicken bouillon. Cover and simmer on medium heat for 20-30 minutes.
3.) Shred the chicken with forks. Then add in the bean thread noodles. Stir to loosen up the noodles. (*Add desired amount of chicken broth. If you like your chicken long rice dryer, add less broth.)
4.) Throw in some sliced green onions. Season with salt and pepper as needed. Enjoy!
