Today’s recipe;
Pineapple Chicken Chili
800g (2 lb) Chicken Maryland Pieces.
1/2 a Sweet Pineapple.
400g (1 lb) Onions.
5 cloves Garlic.
3 red Bell Peppers.
5 dried Red Chili’s.
1 long Red chili.
3 tsp Smoked Paprika.
2 tsp Ground Coriander.
1 tsp Tumeric.
2 tsp Umami (optional).
2 dsp Lime Juice.
1 to 2 dsp Raw Sugar.
2 cups Chicken Stock.
3 dsp Cornstarch mixed in a little water.
Salt and ground White Pepper to taste.
A little Peanut oil for frying.
