Escabeche can also be cooked in other ways, depending on which country you want to shoot for. This Filipino fish escabeche recipe uses fried fish (I’m using pompano), topped with a sweet and sour sauce and vegetables!

This is a healthy-ish dish that you can whip up easily at home, as long as you’ve got a big meaty fish to fry and the basic ingredients to make sweet and sour sauce!

This is one of my go-to recipes if I’m craving something sweet and sour, with a lot of flavor to dress up an ordinary ol’ fish. Just make sure you don’t burn the sugar in the sauce!
