– I used Kikkoman Lite because that’s what we had in the pantry, but it’s way better to use a Filipino brand soy sauce, or a dark soy sauce!

I love making soft-boiled eggs, but having plain eggs as a daily protein snack gets kinda boring after a while. My sister, Claudine, is a fitness trainer who gave me the idea to make these adobo eggs as an easy, to-go snack for a quick protein fix!

Ok, ok, “quick” is a term that might not apply in this recipe because you’ve got to let the eggs marinade in the adobo sauce overnight, but it really is simple.

Boil eggs, boil adobo seasonings, marinade, and you’re done! These eggs are savory and tart, totally making my Filipina tastebuds happy.

My sister likes to add a dash of sugar in her recipe, which adds to the phenomenal flavor of these Filipino adobo eggs. I used apple cider vinegar, which is inherently sweet, so I didn’t include more sugar.
